Green pepper, probably the most delicate of peppers! It is obtained by picking pepper berries before they mature and storing them in vinegar or better, in brine to preserve their tenderness and flavor. Very aromatic, with more vegetal notes than its white and black cousins, green pepper plays with sardine and extra virgin olive oil a fine partition.
